Start Your Day With Strawberry Pancakes
Pancakes are one of the first things I was taught to cook, as a child, myself. Even the littler ones can get involved in making this yummy breakfast, by helping to pour ingredients and stir the batter.
I got this specific recipe from Rachael Ray’s magazine, some time ago and it makes some very good pancakes, without a lot of mess and fuss involved.
1 1/4 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup milk
1/2 teaspoon vanilla extract
1 tablespoon unsalted butter, melted
2 cups sliced strawberries
Combine the dry ingredients - flour, sugar, baking powder, and salt - in a medium sized bowl. Using a smaller bowl, mix the egg, vanilla, and milk, with a whisk. Preheat your griddle or flat-bottomed frying pan over medium heat, as you continue mixing the ingredients.
Comine the milk mixture into the flour mixture, using a whisk. Add the butter and whisk until smooth. Using a spoon, fold the strawberries into the thick batter.
Ladle the batter onto the preheated griddle, about ¼ cup at a time. Let them cook on one side until bubbly and set through, which is usually about 3 minutes. Turn them over and let them brown on the second side for about 2 minutes.
Plate them up and top them with your favorite pancake toppings. Use butter, maple syrup, strawberry syrup, whipped cream, or more fresh strawberries. A breakfast treat the entire family can enjoy!
